Riberry – A glossy red berry with tart, spicy undertones reminiscent of clove and cinnamon. Traditionally used in sauces and jams, it adds depth to desserts, dressings, and glazes for meats.
Finger Lime – Known as “citrus caviar,” its tiny juice pearls offer a sharp, refreshing burst of flavour. Perfect for seafood, cocktails, desserts, or garnishing for a dramatic pop of colour and texture.
Ruby Saltbush – A hardy plant producing small, jewel-like berries with a mild salty-sweet taste. Ideal for snacking, salads, baking, or as a natural seasoning in both savoury and sweet dishes.
Warrigal Greens – Australia’s native spinach with triangular leaves and a mild, slightly earthy flavour. Excellent wilted, sautéed, or added to pies and pastas; prized for its versatility and nutrition.
Rivermint – A cool, refreshing herb with a softer, sweeter aroma than common mint. Adds brightness to teas, marinades, salads, desserts, and refreshing beverages.
Midyim Berry – Delicate, speckled berries with a sweet, mildly floral flavour and a soft, juicy texture. Perfect for snacking, baking, yoghurt bowls, or infusing into light syrups.
Pigface – A coastal succulent offering crisp, salty leaves and vibrant, tangy fruits. The leaves add crunch to salads. For the fruit think salty kiwi fruit.
Cinnamon Myrtle – Fragrant leaves with warm notes of cinnamon, clove, and pepper. Ideal for baking, spice rubs, teas, and aromatic broths; a natural way to add depth to both sweet and savoury recipes.
Sandpaper Fig – A native fig with a sweet, jammy flesh encased in a skin backed by its distinctive rough leaf. Traditionally eaten fresh or dried, it’s wonderful in jams, tarts, chutneys, and cheese pairings.
Small-Leaved Tamarind – Produces dark, tangy fruit with a rich tartness similar to tropical tamarind but uniquely Australian. Excellent for sauces, curds, chutneys, desserts, and flavour-packed marinades.
