Australia’s Native Citrus Caviar
Finger Lime is a unique and highly prized native Australian citrus, often referred to as “bush caviar” thanks to its tiny, bead-like pulp that bursts with zesty flavour. Native to the rainforests of eastern Australia, this small thorny shrub or tree typically grows 2–5 metres tall and produces slender, finger-shaped fruits in a range of colours.
The juicy pearls inside are perfect for adding a tangy twist to seafood, salads, desserts, and cocktails, making Finger Lime a favourite among chefs and bushfood enthusiasts.
