Ruby Saltbush (Enchylaena tomentosa) is a hardy, drought-tolerant native shrub found across most of mainland Australia. Known for its vibrant, ruby-red berries and silvery-green foliage, this plant is both ornamental and edible. It has long been used in Aboriginal bush food and medicine, and today is valued in bush gardens and revegetation projects.

Growing Conditions

  • Climate: Thrives in arid to semi-arid climates; very heat and drought-tolerant.

  • Sunlight: Prefers full sun but tolerates part shade.

  • Soil: Very adaptable – grows well in sandy, loamy, or even salty soils.

  • Watering: Extremely drought-hardy; requires little to no watering once established.

  • Growth Habit: Low-growing, spreading shrub (30–60 cm high), forming a groundcover.

Growing Tips

  • Pruning: Prune lightly to maintain shape or control spread.

  • Low Maintenance: Ideal for low-water gardens and bushland restoration due to its resilience.

Food Uses

  • Berries: The small, juicy berries range in colour from green to bright red when ripe. They have a salty-sweet taste and can be eaten raw.

  • Culinary Use: Can be added to salads, pickled, or used as a garnish. The berries pair well with savoury dishes and cheese plates.

  • Leaves: Although not commonly eaten, the succulent leaves are also edible and can be used in small amounts.
